Black and Blue Berry Muffins

 

Baking Time: 20 to 25 minutes

Makes 18 muffins

INGREDIENTS
· 1 cup whole-wheat flour
· 1 cup all-purpose flour
· 1/3 cup wheat germ
· 2/3 cup sugar
· 1 tablespoon baking powder
· 1 teaspoon salt
· 1 teaspoon cinnamon
· 2 eggs-beaten
· 2 cups half and half
· 1 cup fresh blackberries
· 1 cup fresh blueberries

 

Preheat oven to 400 degrees F.

 

Butter muffin pan

 

In a large mixing bowl, whisk together flours, wheat germ, sugar, baking powder, salt and cinnamon.   In another bowl, whisk together eggs and half-and-half.   Stir wet ingredients into dry, mixing just to combine.  Fold in berries. Scoop batter into muffin pan cups

 

Bake for 20-25 minutes, or until a toothpick inserted in center comes out clean
